PURE VEG OMELETTE RECIPE

Hey don't get  confused by seeing the picture attached.  As  the name suggests this  is a  purely veg dish and very  easy to make.

INGREDIENTS   
  1. Gram flour(besan) : 3/4 cup
  2. Rice flour : 1 tsp(optional)
  3. Finely chopped tomato : 1/2 cup
  4. Finely chopped onion :1/2 cup
  5. Finely chopped green chillies : 1-2
  6. Chopped cury leaves : 1 tsp
  7. Chopped coriander leaves : 3-4 strands
  8. Asafoetida(Hing) : 1/4 tsp
  9. Pepper powder : a pinch
  10. Coconut oil : 1tsp
  11. Salt to taste 
 METHOD

1.    Mix the ingredients from 1- 8  with water to get a dosa batter consistency.
2.    Heat a non-stick pan and drizzle some oil, spread the batter into thin omelettes.
3.    Drizzle some oil on top.
4.    Turn the omelet upside down and fry on other side.But don't allow to fry too much as it will get dark.
5.    Sprinkle pepper powder on top and serve hot.

WATER MELON JUICE RECIPE

Water melon has lot of water content , vitamins and and has little or no fat content in it.So it is good to consume water melon juice especially in the summer season. 
INGREDIENTS
  1. Water melon chopped and deseeded : 2 cups
  2. Sugar/ Honey : 2 tsp
  3. Pepper powder : pinch(optional)
  4. Ice cubes : 3- 4           
METHOD   
  1.  In a blender, add peeled and deseeded watermelon pieces, sugar and pepper Powder 
  2. Grind all the above ingredients well
  3. Transfer to a glass and top with Ice cubes.
  4.  Serve Watermelon Juice chilled. 
       
SUGGESTIONS
      
       If water melon is sweet enough  you can avoid adding sugar.

OLAN RECIPE

Olan is a traditional Kerala sadya dish.As Olan is enriched with coconut milk it has a unique and pleasing aroma. Here’s the recipe for Olan.

INGREDIENTS

  1. Thinly sliced ash gourd : 1 cup
  2. Thinly sliced pumpkin : 1/2 cup
  3. Red cowpea beans : 1/4 cup
  4. Green chilly : 2  nos(split)
  5. Curry leaves : 1 spring
  6. Thick coconut milk : 1/4 cup
  7. Thin coconut milk : 1/2 cup
  8. Coconut oil : 1-2tsp
  9. Salt to taste
METHOD

  1. Pressure cook beans with enough water,drain it and keep aside.
  2. Cook ash gourd,pumpkin and green chillies in thin coconut milk adding 3-4 tbsp of water.
  3. Mix cooked beans,salt and let it boil for a minute. 
  4. Now add thick coconut milk.
  5. Switch off the flame and add coconut oil and crushed curry leaves on top
SUGGESTIONS

     Don't add more water while cooking ash  gourd as it releases water when get cooked
