BEETROOT PACHADI RECIPE

Beetroot Pachadi is an important dish served as a part of Kerala special sadhya..It is very easy to make as well as yummy too....

INGREDIENTS

  1. Beetroot grated : 2 cups
  2. Mustard seeds : 1/2 tsp
  3. Finely chopped ginger : 1/2 tsp
  4. Curry leaves : 1 spring
  5. Green chillies : 2 nos(split)
  6. Coconut oil : 2 tblsp
  7. Curd : 2 cups
  8. Salt to taste

METHOD

  1. Heat oil  in a pan over medium heat. 
  2. Splutter mustard seeds
  3. Add finely chopped ginger,green chillies and keep stirring
  4. Add grated beetroot,curry leaves and salt to taste
  5. Fry for 2-3minutes till beetroot becomes dry and fully cooked.
  6. Remove the mixture from flame and allow to cool 
  7. Add curd to the mixture 
  8. Beetroot pachadi is ready to serve 

SUGGESTIONS

You can use a mixture of buttermilk and curd if you prefer the pachadi to have a thin consistency.
